Moving forward, things like this will be classified as ghetto gourmet.  Or, “putting random crap from my fridge into a pan”.
Leftover rotini pasta, cubed breaded chicken, and peas, sauteed in garlic, olive oil, and a little butter.  Cracked black pepper and parmesan cheese over the top.  Simple, and cost nothing (this time around at least).

Leftover lunch today from my chicken parmesan dinner last week.  Having rushed out the door this morning, I decided to go to the deli next door to buy a $1 roll.  We have a toaster oven here, which changed the entire tone of what would have been an otherwise plain meal.  Most of the bagels, breads, or other baked goods sold in this area (and other business-centric places) are semi-stale and bland.  A simple two minutes in the toaster improves the taste ten fold!

When trying to clear out one’s home fridge and put together a decent lunch, it takes MacGyver-like skill.  This my friends is brown rice and black beans and chorizo I made a few nights ago, topped with mom’s BBQ pulled pork.  The inspiration behind this creation came from a BBQ chicken burrito I ate last month from Burritoville in FiDi.
