Growing up, my mom never let me have any beef cooked anything other than “medium well”.  Be it hamburgers or steaks, the only source of juice coming to that dish was the globs of ketchup or steak sauce dumped on top (yes, using ketchup on steak is a sin).  I’m not sure when this interview took place, but Gordan Ramsay hits it right out of the park.  It’s like ordering a burrito with extra hot sauce, and not being able to taste the filler over the heat: ordering a steak “well done” means it’s game over on any distinguishable flavor on that cut.  No juice, no taste.
