Leftover lunch today from my chicken parmesan dinner last week.  Having rushed out the door this morning, I decided to go to the deli next door to buy a $1 roll.  We have a toaster oven here, which changed the entire tone of what would have been an otherwise plain meal.  Most of the bagels, breads, or other baked goods sold in this area (and other business-centric places) are semi-stale and bland.  A simple two minutes in the toaster improves the taste ten fold!

Sunday dinner ends the weekend on a good note, while starts the long week off perfectly

I’m not Italian, which makes both the ritual of early weekend cooking and chicken parm seemingly uncharacteristic.  However, this dish is simple, little ingredients, and incredibly hearty.  I like the texture of vermicelli when having such a big multi-layered protein like chicken parm.  The noodles provide just enough starch to satisfy carb-fans, but providing more space for the chicken to occupy.

When I tackle more difficult recipes, I’ll provide a much better running commentary.  But for now, enjoy with your eyes.
